Recently my teething two-year-old has been so picky. I’m sure you mamas can relate. I was looking for something that was healthy, full of protein, and fun to give her in the mornings to hopefully keep her full and happy. There is no tougher critic than a two-year-old.

Enter Gary’s True Grit Gluten-Free Pancake and Waffle Mix. We don’t have any gluten sensitivity in our house, but the regular mix is currently out of stock. Honestly, everything I’ve ever tried that claims to be “Gluten Free” I’ve found to not taste as good as the gluten-full variety. However, these are really good. NO GMOs. NO preservatives. WINNING!

Sure, sometimes we make a chocolate, peanut butter and banana smoothie but a lot of mornings I just mix it with milk and call it breakfast along with a granola bar or something simple like that.

I followed the recipe for the mix and added 2 of scoops of the protein powder and added that to the waffle maker. In a few minutes Charlotte’s new favorite breakfast was made.

The first time I made this was Valentines’ Day and because it was a special occasion, I added a few mini chocolate chips and a pinch of powdered sugar. We didn’t even add syrup/honey/butter to the waffle because it was so delicious with those goodies in it. She ate 3 of them!
